Cherries

It is a fruit of about 2 centimetres of diameter approximately, round, sometimes slightly flat and sometimes pointed at the base, with a soft texture in some cases and in other varieties smooth and crunchy.
The colour of the cherry ranges from dark almost black to bright red carmine. Its pulp, sometimes black or red and sometimes lightly pink, is juicy and sweet or in some cases acidic.

The colour of the cherry ranges from dark almost black to bright red carmine. Its pulp, sometimes black or red and sometimes lightly pink, is juicy and sweet or in some cases acidic.

Size:
Cherries are mainly sized between 18 and 30 millimetres in diameter and are usually sold with the tail to give them greater consistency and to prevent the fruit from bleeding out, which occurs easily when it is removed from its stalk.

Origin

– Valle del Jerte, Aragón, Cataluña, Comunidad Valenciana.

Storage and transport

– The main enemy for the preservation of the cherry is water or humidity, which causes the loss of consistency of the fruit (softening) and a noticeable decrease in the quality of its pulp; it can be stored at 1- 3ºC, from 3 to 10 days, depending on the variety.
– The cherry is highly perishable, especially those with soft skin, being more durable those with pulp and consistent skin; transport conditions are 0.5-2ºC, with a relative humidity of 90-95%.
