Kaki

– The persimmon tree belongs to the Ebenaceae family and produces a fruit known as kaki, persimmon or Sharon fruit.
– Sunrise Fruits Company offers the Rojo Brillante kaki of the region of Valencia.
– This premium quality, large, prolate fruit has good eye appeal. Its astringent taste is removed by post-harvest treatment. The skin is delicate and difficult to handle.

– Colour: semi-adherent skin which is yellowish-orange when harvested and bright red when ripe.
– Taste: very astringent (high tannin content)
when harvested unless treated, and sweet when ripe.
– Flesh: firm, reddish-orange when harvested, and juicy, bright red when ripe.
– Shape: round cross-section and slightly elongated longitudinal section.
– Kakis are supplied whole with calyx and stalk, healthy, clean, with virtually no abnormal external moisture and no peculiar odours and/or flavours.
The Rojo Brillante cultivar can be eaten in two ways:
– CLASSIC. Harvested ripe when the flesh is soft and can be eaten with a spoon.
– PERSIMON. Hard, orange flesh. After being treated to eliminate its astringency it can be eaten with a knife and fork, ready for sale and export. Available from October.
